The Greenock Organic Grenache and Mataro are complemented by a small portion of Valley Floor Cabernet Sauvignon. The fermentation process involved minimal punchdowns, with a significant portion of the Grenache undergoing whole bunch fermentation, resulting in bright floral aromatics. The Mataro contributes texture and depth, while the Cabernet adds lift and roundness to the wine. The winemaking approach prioritised minimal intervention, including limited sulphur use, wild yeast fermentation, and no fining or filtration.
